Bhapa Doi, or sometimes called Mishti Doi, is a very elegant and tasty Bengali dessert. Made with 2 main ingredients, curd and condensed milk with cardamom and saffron (or other ingredients) used for flavor.   It is one of the healthier and easy to make desserts with limited sugar and no oil or butter. Steaming the mixture gives it a very unique texture and taste. You can serve it warm or chilled though I prefer to eat it chilled.
Now you can have a dessert without feeling guilty-conscious.

Ingredients

  • 1 cup greek yogurt (See note below if Greek yogurt not available)

  • 1 cup sweetened condensed milk

  • 2 tsp cardamom seed powder

  • Saffron – few thread

  • 1 tsp dry rose petals (optional)

  • 4-6 Figs (optinol)

  • ½ tsp cinnamon powder

  • 3 to 4 star anees

  • 2 tbsp sugar

Directions

  • Take a bowl and add greek yogurt, condensed milk, cardamom powder and saffron.
  • Beat the mix until well blended.
  • Take small oven proof bowls and add dahi mixture. cover with aluminum foil.
  • Prepare to steam, take a cooker or use an oven at 350F or 175C. If using the oven, take a baking tray and add 1 cup water in the tray, and put in the bowls in water.
  • Steam for about 20 minutes till mixture sets in. Take it out and allow it to cool naturally.
  • Keep it in the refrigerator until well chilled. (Preferably overnight, minimum 4 hours).
  • In the meantime, take a pan and add 1 cup water with 2 tbsp sugar. Put the pan on medium heat.
  • Add figs, cinnamon powder, star anees and 1/2 tsp dry rose petals.
  • Heat for about 5 minutes till it boils. Close the heat and allow it to cool.
  • Take a serving plate, remove bhapa dois (refrigerated mix) from bowls, put liquid syrup prepared above on top.
  • Garnish with fig and rose petals and serve.

Notes

  • If you do not have greek yogurt, use fresh yogurt/ dahi (2 cups) and put it in a linen cloth in a sieve. Tie it tightly and let the liquid drain out. Keep it in the refrigerator till water drains out completely (about 2 hours)
  • Figs are optional and you can also use nuts such as almonds and pistachios also for dressing. and raisins.
  • You can use jaggery as an alternative to sugar.
