Sooji (Semolina) Halwa

Sooji ka halwa is a type of halwa made by roasting semolina in a fat like ghee, adding a sweetener (sugar/ jaggery/ honey etc) and nuts to taste. It can be served for breakfast or as a dessert item. Sooji halwa can be offered as an offering to God (prasad) and a must offering to Goddess Durga during navratri. It is especially popular during winter, where piping hot halwa helps warm up the body and reduces congestion. It is a simple,delicious Indian sweet dish. Try it out.

Rasmalai

Rasmalai is one of the most famous (and delicious) Indian sweets, made from milk and sugar. It’s a very rich dish, served chilled.

I love this dish; it’s often served at weddings and other special occasions. It’s similar to rasgulla, which I’ve posted before, but here thick milk is also used. They’re quite easy to make, and paying attention to detail – like remembering to knead but not over-knead – will make them even better. Try this mouthwatering recipe!

Spongy Rasgulla

Rasgulla is one of the famous and delicious Indian sweets made from milk and sugar. Best variety of rasgullas come from West Bengal and they are very light, soft and spongy. Rasgulla is fairly easy to make but one needs to be aware of small tricks to make it spongy and turn it into a perfect dessert. One of the tricks is to make sure you smooth chenna (Indian cottage cheese) by kneading it  but don’t over-knead it.

Traditionally, we boil milk for a long time to make it thick for kulfi, which requires a lot of time and patience. Here is an easier and faster way to make kulfi. I’ve used heavy whipping cream and as much saffron and nuts as you want to make a tasty and creamy dessert. You can keep it in the fridge for a month.

Bread Pudding In Condensed Milk (Shahi Tukda with Rabadi)

is dessert is rich, tasty and very easy to make from common ingredients.  It is a bread pudding (Indian sweet of fried bread slices soaked in sweet condensed milk with spices, including saffron and cardamom). It has its roots in Awadhi cuisine and a similar dessert with roots from Hyderabad region. It is particularly prepared during the festive month of Ramadan and on Eid.
