Diabetic Friendly Vegan Breakfast Patties

Food trend, nowaday, is trending towards healthy vegan food with less carbohydrates, especially with diabetes and blood sugar prevalence at an all time high level. I tried to make vegan patties with lots of vegetables and used a small quantity of  chickpea flour (contains lots of proteins) as a binder. It is very simple to make, tastes  delicious and also can be stored for a couple of days in a fridge. The recipe below details the vegetables that I used but the recipe can use any vegetable that you like. 

Enjoy this as breakfast or snack and require little effort.

Now that we’re all stuck inside, it’s starting to become a pain to figure out what to eat for each meal and plan out meals. What I love about this dish is that you can make it at night and simply bake in the morning and you have a delicious breakfast for the whole family ready to go! It reminds me of French Toast, but even more delouse.

Steel-cut oats (vegan)

With Shelter in Place and everyone staying at home, it is a good time to be adventurous and try different kinds of breakfast, lunch and dinner. I tried preparing steel cut oats in coconut milk and topped it off with Chia seeds to provide crunchiness and Mango for added flavor. It’s a really delicious recipe and perfect for vegans also. My husband and kids liked it a lot. Try it out!
