With Shelter in Place and everyone staying at home, it is a good time to be adventurous and try different kinds of breakfast, lunch and dinner. I tried preparing steel cut oats in coconut milk and topped it off with Chia seeds to provide crunchiness and Mango for added flavor. It’s a really delicious recipe and perfect for vegans also. My husband and kids liked it a lot.

Ingredients

  • ½ cup steel cuts oats

  • ½ cup coconut milk 

  • 2 teaspoon chia seeds 

  • 1 1/2 tbsp agave nectar (or to taste) 

  • ½ cup fresh mango peeled and diced

Directions

  • Boil 4 cups of water in a pot. Add steel-cut oats, stir and close the lid.
  • Cook it on low – medium heat for about 15 minutes or until tender.
  • Turn off the heat and wait for about 10 minutes with the lid closed.
  • Add 1/2 cup coconut milk, chia seeds and agave nectar in a bowl, mix everything.
  • Add cooked oatmeal and mix. Add additional water/ coconut milk, if required.
  • Keep in the fridge for about 5 hours or overnight.
  • Take a glass cup, add oatmeal mixture and garnish with mango.
  • Enjoy!

Notes

  • it can be served hot and cold.
