Now that we’re all stuck inside, it’s starting to become a pain to figure out what to eat for each meal and plan out meals. What I love about this dish is that you can make it at night and simply bake in the morning and you have a delicious breakfast for the whole family ready to go! It reminds me of French Toast, but even more delouse.

Lemon Ricotta Pancakes
Last month we tried lemon ricotta pancakes for the first time at brunch and absolutely fell in love; of course, I had to try them out! These pancakes are soft and fluffy and the gooey ricotta inside makes them all the more mouthwatering. Since everyone’s at home right now, it’s a great time to try new things!
Steel-Cut Oats (Vegan)
With Shelter in Place and everyone staying at home, it is a good time to be adventurous and try different kinds of breakfast, lunch and dinner. I tried preparing steel cut oats in coconut milk and topped it off with Chia seeds to provide crunchiness and Mango for added flavor. It’s a really delicious recipe and perfect for vegans also. My husband and kids liked it a lot. Try it out!
