Baked Roll Oats With Berries

hourThis strawberry banana baked oatmeal recipe is the perfect make ahead breakfast. Strawberry, banana, and chocolate, what could be better? This can also be stored in the fridge for about 4-5 days so you can make it ahead and it will last you the whole week!
Ingredients
2 cups rolled oats
¼ cup maple syrup
1 tsp baking powder
1 tsp cinnamon powder
½ tsp sea salt
2 cups almond milk or any variety
1 large egg or 1 tbsp flax seed powder
2 tbsp coconut oil
2 tsp vanilla extract
2 banana, 1 mashed and 1 slices
1 ½ cup strawberry, divided in 2 parts
½ cup chocolate chips
Cooking spray
For serving: additional strawberries, banana, and milk
Directions
- Preheat the oven to 375F.
- Spray an 8 inch square baking dish with cooking spray.
- In a large bowl, mix together the oats, baking powder, cinnamon and salt.
- Add in milk, maple syrup, egg, coconut oil, vanilla extract, and mashed banana. Stir well to combine.
- Gently mix 1 cup strawberry, ½ banana slice and ⅛ cup chocolate chips into the oatmeal mixture.
- Carefully pour the mixture into a baking dish.
- Then, spread the leftover strawberry, banana and chocolate chips on top.
- Bake for about 50 to 60 minutes, or until the middle is baked.
- Remove from the oven and let it cool for a few minutes. This will allow the baked oatmeal to set to take a little more time.
- For garnish: top with additional strawberries, bananas and add milk.
- Enjoy!
Notes
- You can add any other topping/fruits like apples, pear, blueberries, or peanut butter.
