Minestrone Soup

minutesI usually post Indian dishes, but this time I decided to post one of my (and my childrens’) favorite recipes from the Italian cusine. Minestrone soup is very famous in Italy. It’s very thick, and is a mix of many vegetables; you can add any seasonal vegetables you’d like to! It’s absolutely delicious, and it’s definitely worth a try, especially in the cold winter months!
Ingredients
2 cups vegetable stock
1 medium onion – finely chopped
3 to 4 garlic cloves – minced
2 tbs olive oil
1 zucchini – finely cut
1 celery rib – finely chopped
½ cup peas
1 carrot – finely chopped
½ 14 oz can black bean – remove the liquid and wash
½ cup green beans
2 large tomato -finely chopped
½ cup tomato paste
2 tsp italian seasoning
1 bay leaf
¼ cup small shell pasta
Salt to taste
Black pepper to taste
Cheese, fresh basil leaves, and rosemary for garnish
Directions
- Take a large pan and put it on the stove. Add oil, bay leaves, onion and garlic. Stir for about 2 minutes and then
- Add the carrots, black beans, tomato paste, peas, chopped zucchini, celery, and tomato. Mix, and add vegetable stock, Italian seasoning, salt, and black pepper.
- Then, mix in the pasta and green beans. Add about 2 cups water then close the lid and let it simmer for 15 to 20 minutes or more if required.
- Check the consistency, and if required, add more water or stock, or if you need add corn starch.(optional) or guar gam .
- For garnish, sprinkle cheese and basil and leaves.
- Serve with crispy bread
Notes
- Add corn starch or guar gam , add 2 tbsp water with 2 tsp corn starch or guar gam mix and add . then soup gravy little thick.
- Use san marzano tomatoes, more taste.
- Add any vegetables as you like.
