Sabudana Cutlets

1 cup sabudana – washed and soaked for at least 2 to 3 hours. I’d suggest overnight. Don’t use too much water – 1/3 cup should be fine.
2 medium potatoes – mashed
2 green chillies – finely chopped
1 tbsp coriander leaves – finely chopped
Salt to taste
1 tsp red chilly powder or black pepper to taste
2 cups oil for frying
Directions
- Mix the sabudana, potato, green chilly, red chilly, salt, and coriander leaves.
- Then, divide into equal parts and make cutlets/patties in any shape you’d like. keep aside for 1 hour.
- Put the fry pan on the stove at medium heat and add oil. When the oil is heated, add only one cutlet and fry both sides until golden. If the cutlet doesn’t break, go ahead and fry the rest.
- Try to leave space in between the cutlets or they’ll break.
- Serve hot with green chutney
- Note: You can also fry these on a griddle.
Notes
- Make a day before, and keep in the fridge. fry whenever you need. more cricp and less oil.
