This is a very high protein and delicious dish! We always offer it in Durga puja (a Hindu holiday), because we believe Durga Ji loves it. This is easy to make, and a great snack or lunch. This recipe is also oil free, sugar-free, vegan and gluten free. In India we used to eat it quite often, and some people also add potatoes, tomatoes, and spices to make a thick curry and serve with rice.

Steel-Cut Oats (Vegan)
With Shelter in Place and everyone staying at home, it is a good time to be adventurous and try different kinds of breakfast, lunch and dinner. I tried preparing steel cut oats in coconut milk and topped it off with Chia seeds to provide crunchiness and Mango for added flavor. It’s a really delicious recipe and perfect for vegans also. Nowadays, many people are turning away from meat-based products. With that, plant-based products like Impossible Burgers or Beyond Meat are getting popular because these have meat-like taste and texture and also provide lots of protein. These products are relatively expensive to eat in a restaurant, so I tried to make a similar patty in my kitchen, and it turned out very good and tasty. Even better, it’s using ingredients mostly available in your pantry! I used Textured Vegetable Protein (alternate soy chunks/vadi or nutrela broken into small granules) as the base.
