Vegan Buddha bowl

This is my favorite dish and I always enjoy making and eating it. Add as many vegetables as you like and feel guilt-free when you eat it

Ingredients

  • 1 Cup chickpea or kabuli chana – canned or cooked, or tofu – cut into cubes

  • 1 Cup kale – finely chopped

  • 1 Cup quinoa – cooked

  • 1 Cup spinach – finely chopped

  • 1 Medium size sweet potato – cut into cubes

  • 1 Cup green beans – cut into halves

  • 1 Medium size onion – cut into slices

  • 1 Avocado – cut into slices

  • 2 tbsp hummus

  • Olive oil for seasoning

  • Salt and pepper to taste

  • Onion powder, garlic powder to taste

  • 1 tsp red chilli powder

  • 1 Lemon

  • 2 tbsp coriander leaves

Directions

  • Take a fry pan and oil and set at medium heat.
  • Add chickpeas, onion salt, garlic powder, onion powder, and red chilly powder.
  • Mix everything for about 1 minute, then close to the lid and keep aside.
  • If using tofu, add to oil at high heat. Stir and add seasoning as you like.
  • Take another fry pan and add oil with onions. Mix at high heat for about 1 minute. Add salt and pepper to taste, then remove the onions.
  • If needed, add more oil, then add green beans. Mix, wait for about 1 minute, then mix again.
  • Add sweet potatoes, mix, and add salt and pepper to taste. Cover for about 2 minutes or until tender.
  • Remove the veggies.
  • Add kale, mix, and add salt and pepper to taste.  Stir for 1 minute then remove.
  • Add spinach, mix, with salt and pepper to taste. Stir for 1 minute, then close the lid for about 1 minute.
  • Take a wide plate then make a circle on the plate with separate sections of tofu or chickpeas, quinoa, hummus, spinach, kale, sweet potato, green beans, and onions.
  • Garnish with lemon juice and coriander leaves.

  • Note: Feel free to add any veggies and spices. Do not mix everything, and instead enjoy every individual vegetable’s  taste.
  • Mix spice in chickpea, then fry in the pan taste more good.
