This wrap is a very healthy and tasty, and it is super yummy recipe.

Ingredients

  • 1 tbsp olive oil

  • 3 Cups cups cubed eggplant (½ – inch cubes)

  • Salt and pepper to taste

  • 3 tsp fresh lemon juice

  • 2 tsp balsamic vinegar

  • 1 cup chopped spinach leaves

  • ½ cup chopped tomato

  • 1 cup hummus

  • 4 , 10 or 11 – inch tomato or spinach flavored tortillas

Directions

  • First, take a wide pan and add the eggplant. Sprinkle some salt on and leave it for about a minute on the paper towel, then wash the eggplants.
  • Heat the olive oil in a large pan at high heat until it smokes.
  • Mix the eggplant with the salt and pepper in the pan, stirring frequently.
  • Cook until the eggplant is tender (about 5 minutes) and all sides are brown.
  • Remove from the heat and toss with 1 tsp lemon juice and vinegar.
  • Mix the spinach with the tomatoes in a large bowl.
  • Add salt and pepper and the remaining lemon juice.
  • Add the eggplant, and toss.
  • Spread the hummus evenly on the tortillas, leaving at least a 1 – inch border around the edge. Divide the eggplant mixture amongst the tortillas.
  • Ready !
