This salad is very healthy and colorful, and also tasty and refreshing! It’s perfect for summer!

Ingredients

  • 1 Cup quinoa

  • ½ Cup tomatoes – cut in small pieces

  • ½ Cup English cucumber –  cut in small pieces

  • ½ Cup onion – finely cut

  • ½ Cup romaine (or any other kind) salad

  • ½ Cup corn

  • 1 Tbsp each of fresh mint, parsley and coriander leaves – finely chopped

  • 2 Tbsp olive oil or grapeseed oil

  • Salt and pepper to taste

Directions

  • First, cook the quinoa, and keep in the refrigerator for at least an hour.
  • Take a big wide bowl and add quinoa, tomatoes, cucumber, onion, corn and green leaf salad.
  • For the dressing, mix oil, salt, and pepper. Lastly, add mint and parsley.
  • Add the dressing to the quinoa salad.
  • Garnish with coriander leaves, and keep in the refrigerator for at least 2 hours, then serve!
  • Note: Add any other vegetables that you’d like when adding the tomatoes and cucumbers.
