Stuffed eggplant (bharwa baingan) is a delightful recipe and has a very nice taste.

Ingredients

  • 6 Chinese or small eggplants

  • 1  tsp cumin seed

  • 2  tsp red chilly powder

  • 2  tsp turmeric powder

  • 2 tsp amchoor powder

  • 1  tsp garam masala

  • 3 tbsp coriander powder

  • Salt to taste

  • 2 tbsp oil or more

  • 2 tsp tawa fry masala

Directions

  • First, cut straight down the middle of the eggplant, but make sure not to break it.
  • Take a wide bowl and mix the red chilly, turmeric, salt, amchoor powder, coriander powder, garam masala, tawa fry masala and  2 tsp oil and keep aside.
  • Take a pan and put it at medium heat on the stove,  Add oil and wait until it is heated and then add cumin seeds. Wait for about 30 seconds or until the cumin seeds crackle. Now, add the eggplant and cover for about 2 minutes, Now, stir and cover for another 5 minutes or until the eggplant is tender.
  • Season with coriander leaves, and serve with naan, roti and/or paratha.
