Try out this delicious, healthy gluten-free muffin recipe! You truly will not realize it’s made with almond flour! Feel free to add any mix-ins you’d like, such as poppy seeds, chocolate chips, blueberries, etc.

Ingredients

  • 4 ½ cups almond flour

  • 3 large eggs

  • ½ cup maple syrup (adjust to taste)

  • 1 cup Greek yogurt

  • 1 tsp vanilla essence

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ¼ tsp salt

  • 1 lemon zest or orange zest

Directions

  • Preheat the oven to 350 F.
  • Take a bowl and mix together egg, vanilla essence, orange zest, maple syrup, and greek yogurt.
  • Take another bowl and add almond flour, salt, baking powder, and baking soda.
  • Mix and add into the egg mixture, be careful to not overmix.
  • Line a tray with muffin liners, fill with the batter, and bake for 15 to 20 minutes or until a toothpick comes out clean.
  • Enjoy!
