minutesTry out this delicious, healthy gluten-free muffin recipe! You truly will not realize it’s made with almond flour! Feel free to add any mix-ins you’d like, such as poppy seeds, chocolate chips, blueberries, etc.
Ingredients
4 ½ cups almond flour
3 large eggs
½ cup maple syrup (adjust to taste)
1 cup Greek yogurt
1 tsp vanilla essence
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
1 lemon zest or orange zest
Directions
- Preheat the oven to 350 F.
- Take a bowl and mix together egg, vanilla essence, orange zest, maple syrup, and greek yogurt.
- Take another bowl and add almond flour, salt, baking powder, and baking soda.
- Mix and add into the egg mixture, be careful to not overmix.
- Line a tray with muffin liners, fill with the batter, and bake for 15 to 20 minutes or until a toothpick comes out clean.
- Enjoy!
Notes
- you can keep it in fridge 4 to 5 days
- Add blue berry orb chocolate chips
- Room temperature for 2 or 3 days
