Restaurant Style Mughlai Moong Dal

Moong dal is one of the most popular and versatile lentils in Indian cooking. Light, easy to digest, and rich in protein, it’s a staple in everyday meals. With its mild, slightly sweet flavor and quick cooking time, moong dal is perfect for making comforting dals, khichdi, soups, curries, pakoras, and even desserts like halwa. This dal is thick and creamy, perfect for cold weather!

Pitod Ki Sabji ( Rajasthani Curry)

Pitod ki Sabzi is a traditional Rajasthani dish. This is similar to gatte ki sabzi but more delicious and tastes similar to paneer ki sabzi, but does not use any vegetable or paneer. Rajasthan is a desert state with little vegetation and that is why people are accustomed to using fresh vegetable alternatives. If there are no vegetables in your fridge and you still want to make something special then do prepare Rajasthani Pitod ki Sabzi.

Guar Beans (Cluster Beans) Curry

Guar (Cluster) beans have low carb and high fiber content and are extremely good for weight reduction and for diabetic patients. It also contains protein and calcium. This curry is not only healthy, but also very simple and easy to make.

If the beans are not tender, it may take a little bit of work to remove the thread from both sides but the effort is worth the end result.

Serve with dal (lentil) curry and chapati.

Diabetic Friendly Vegan Breakfast Patties

Food trend, nowaday, is trending towards healthy vegan food with less carbohydrates, especially with diabetes and blood sugar prevalence at an all time high level. I tried to make vegan patties with lots of vegetables and used a small quantity of  chickpea flour (contains lots of proteins) as a binder. It is very simple to make, tastes  delicious and also can be stored for a couple of days in a fridge. The recipe below details the vegetables that I used but the recipe can use any vegetable that you like.

Enjoy this as breakfast or snack and require little effort.
