Haldi (turmeric) is one of the best natural anti-inflammatory, antibiotic and antioxidant herbs. Its popularity is increasing every day and fresh turmeric is available in most of the stores all over the world.  Eating pickled turmeric with meals not just adds taste to the food but also provides health benefits.  It’s very simple to make and can be stored in the fridge for about 30 days. 
 

Ingredients

  • 1 cup fresh turmeric (haldi), peeled and julienne cut

  • 2 tbsp salt (or to taste)

  • 1 cup lemon juice (add more based on optional items below)

  • ½ cup whole black pepper (optional)

  • ½ cup fresh ginger, peeled and julienne cut (optional)

Directions

  • Take a clean and dry glass jar, add turmeric, black pepper and ginger.
  • Add salt and lemon juice. Close the lid and mix very well.
  • Keep aside for about 2 days for it to marinate.
  • Store in the fridge and enjoy every day.
