Chocolate Chip Muffins

minutesIt seems like everyone’s getting into baking since we’re stuck at home – try out these muffins! They’re rich, moist, and will go perfect with your coffee.
Ingredients
2 ½ cups all purpose flour
1 tbsp baking powder
1 tsp baking soda
½ tsp salt
½ cup unsalted butter, melted and cooled
1 cup granulated sugar
2 large egg
1 cup buttermilk (or just add 1 tsp vinegar to any other milk)
1 tbsp vanilla extract
1 ½ cup semisweet chocolate chips
Directions
- Preheat the oven to 425F and spread the oil or baking cups in a 12 cup muffin tray.
- In a large big wide bowl, mix the flour, baking powder, salt, baking soda and chocolate chips. Mix together and keep aside.
- Take another bowl and mix the butter, sugar, egg, milk and vanilla extract.
- Slowly mix the two mixtures together until just combined.
- Pour the batter into the muffin tray.
- Bake at 425F for about 5 minutes, then reduce the oven temperature to 375F, and bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for about 5 to 10 minutes.
- Enjoy warm or at room temperature!
