Couscous salad

kcalThis is one of my favorite recipes; it is absolutely delightful and incredibly healthy at the same time. I love to add lots of vegetables and make it colorful – feel free to do the same.
Ingredients
1 cup couscous
2 tbsp olive oil
½ cup chopped onion
½ cup chopped spinach
½ cup chopped green or red pepper (capcicum)
½ cup chopped tomatoes
1 tbsp minced garlic
2 cups vegetable broth
¼ cup sliced black olive
¼ cup fresh basil
¼ cup parmesan cheese
Salt and pepper to taste
Directions
- Take a fry pan and put on slow heat.
- Add olive oil and onions. Wait for a second, then add pepper, spinach, and tomatoes.
- Stir until they are soft (about 3 – 4 minutes) on slow heat.
- Add the couscous. Stir well and add garlic, vegetable broth and salt to taste then cover and set the heat at simmer.
- Stir often, wait for about 8 to 10 minutes or until the couscous is tender.
- Now add black olives.
- Garnish with basil and grated parmesan cheese.
- Enjoy!
Notes
- Add any vegetables as like.
