We all crave for chaats. Dahi Vadas is one of the popular chaats. However, being health conscious, we also want to avoid eating fried foods. I tried making a healthier version of dahi vadas by steaming the vadas instead of deep frying. Surprisingly, the taste was very similar to the traditional fried vadas.With elimination of oil, it becomes a very healthy food with lentils and dahi being the main ingredients. You can satisfy your cravings and stay healthy too. 

Ingredients

  • ½ cup moong dal , wash and soak for 5 to 6 hours

  • ½ cup urad dal, wash and soak for 5 to 6 hours

  • 2 tbsp besan (chickpea flour)

  • 1 tsp fruit salt (Eno)

  • Salt to taste

  • 2 tsp hing

  • 1 tsp oil

  • Chilled dahi, imli chutney, cilantro chutney, chaat masala, jeera powder, chilli powder and salt for serving

Directions

  • Remove excess water and grind dals to make a thick mixture. Add water as required to help grinding but keep a thick consistency.
  • Transfer to a bowl. Add besan and salt and mix thoroughly.
  • Apply oil on the idli plate and put the idli maker on medium heat.
  • Add eno into the dal mixture and quickly mix it.
  • Take lemon size dal mixture using a table spoon and put in the idli plates. Repeat.
  • Steam for about 15-17 minutes on heat, first 10 minutes on medium heat,and last 5-7 minutes on the slow heat. Let it cool down a bit for about 5 minutes.
  • Take a big bowl and add warm water (enough to dip vadas), salt and 2 tsp hing.
  • Add vada into the warm water, wait for about 10 minutes.
  • Take out the vadas and squeeze out the water using your hands.
  • To serve, put vadas in a plate, add in the chilled dahi, and top with imli chutney, cilantro chutney, chaat masala, jeera powder, red chili powder and salt to taste.
  • Enjoy immediately!

Notes

  • if you make less time, soak daal for 2 hours in hot water.
