Typical Salads (without meat) lack proteins. Falafel is an excellent addition to salads that provides plant based proteins, taste and crunch. Coming from Mediterranean/ Middle Eastern region, it is very delicious and can be made a day in advance or the same day. It’s very filling and contains lots of herbs, garlic and onions. I love this recipe because it tastes so good and not too much work. It is  a vegetarian recipe.

Ingredients

  • Falafel:

  • 1 cup garbanzo beans ( Kabuli chana) – soaked and cooked/ one can of Garbanzo beans

  • 1 cup onion – chopped into small pieces

  • ½ cup parsley – washed and chopped

  • 2 tbsp lemon juice

  • 3 to 4 garlic cloves – chopped

  • 3 to 4 green chillies (or to taste) – chopped

  • 1tsp salt (or to tase)

  • 2 tsp black pepper (or to taste)

  • 2 tsp cumin seeds

  • 1 tsp ground coriander powder

  • 1 tsp baking powder

  • 4 tbsp chickpea flour or  bread crumbs or all purpose flour

  • Oil for  frying

  • For Salad :

  • 2 cup greens – romaine salad, iceberg – chopped

  • 2 large tomatoes – chopped

  • 1 medium red onion – cut into slices

  • 1 large cucumber – chopped

  • 2 tbsp chopped cilantro.

  • Olives –  optional

  • Dressing:

  • ⅓ cup Greek yogurt

  • 1 tsp salt (or to taste)

  • 2 tsp black pepper (or to taste)

  • 2 tbsp olive oil

  • 2 tbsp lemon juice (or to taste)

  • Other:

  • Serve with hummus and pita

Directions

  • Add all Falafel  ingredients (except oil) to a food processor and grind for about 2 minutes – till everything is mixed and makes a dough.
  • Add 2 tbsp oil and mix it in the dough.
  • Remove all ingredients to a box or bowl, cover and keep in the fridge for about 4 to 5 hours .
  • Add oil to a frying pan and heat on medium flame. Wait until hot.
  • Make a round shape from dough (Slightly smaller than a golf ball). Add 1 falafel to the oil and deep fry it. It should not break while in oil, if it breaks, add more flour to dough). Fry till golden brown
  • Fry the rest of the falafels and keep aside.
  • Salad:
  • Add greens, cucumbers, tomatoes, red onions and olives to a bowl and mix..
  • Mix dressing ingredients yogurt, olive oil, salt, pepper and lemon juice in a bowl,  add to the salad and mix.
  • Serving
  • Put Salad in a plate, add 4 -6 falafels.
  • Serve with hummus and pita.
