Fruit And Yogurt Granola Tart

minutesI like to think of this dish as a fancy version of a breakfast parfait and tastes like homemade granola parfait, since it is made out of similar ingredients. If making in winter or spring, consider topping with clementine, blood Oranges, pineapple or banana chunks and in fall, top with apple, pineapple, grape and summer berry or any other seasonal fruit.
Ingredients
½ Cup cold unsalted butter – cut into cubes
2 Cups old – fashioned rolled oats
½ Cup chopped walnuts
2 Tbsp maple syrup
2 Cup plain yogurt
2 Cups fresh fruit, cut into 1 in (2.5 cm) pieces
Few leaves of mint
4 Tart pans
Directions
- Preheat oven to 400 f
- Coat tart pans with butter
- In a food processor, add butter, oats, walnuts, and maple syrup and run in pulse mode until a chunky dough is formed
- Divide the dough among the prepared tart pans and press into the bottom and sides to create an even crust (Similar to pie crust)
- Bake until the crust has browned, for about 10 to 12 minutes.
- The crust can be made up to 3 days ahead and stored in airtight container at room temperature.
- When the tart crusts get cooled, spread ½ cup of the yogurt over the bottom of each tart crust and arrange ½ cup fruit on the top,
- Serve: immediately
- Enjoy !
