minutesHummus is a very healthy and tasty Mediterranean dip. It’s really good with foods like bread and crackers. This hummus is made in a slightly Indian style – most importantly, it’s more spicy.
Ingredients
2 cups drained well-cooked chickpeas – keep the water or use can also
1/2 cup tahini (sesame paste)
1/4 cup extra-virgin olive oil, plus extra for drizzling
2 cloves (or to taste) garlic – peeled
Salt and freshly ground black pepper to taste
1 tablespoon (or to taste) ground cumin seeds plus extra for garnish
Juice of 1 lemon, plus more to taste
Chopped fresh parsley leaves for garnish
1 tablespoon paprika or to taste, plus a sprinkling for garnish (optional
Directions
- Mix the chickpea, oil, tahini, garlic, lemon juice, cumin seed, paprika, salt, and pepper in the blender. Grind if needed. Add the liquid from the chickpeas.
- Taste and adjust the seasoning (I like to add more lemon juice).
- Serve, drizzled with the olive oil and sprinkled with some cumin, paprika, and parsley.
