Hummus is a very healthy and tasty Mediterranean dip. It’s really good with foods like bread and crackers. This hummus is made in a slightly Indian style – most importantly, it’s more spicy.

Ingredients

  • 2 cups drained well-cooked chickpeas – keep the water or use can also

  • 1/2 cup tahini (sesame paste)

  • 1/4 cup extra-virgin olive oil, plus extra for drizzling

  • 2 cloves (or to taste) garlic – peeled

  • Salt and freshly ground black pepper to taste

  • 1 tablespoon (or to taste) ground cumin seeds plus extra for garnish

  • Juice of 1 lemon, plus more to taste

  • Chopped fresh parsley leaves for garnish

  • 1 tablespoon paprika or to taste, plus a sprinkling for garnish (optional

Directions

  • Mix the chickpea, oil, tahini, garlic, lemon juice, cumin seed, paprika, salt, and pepper in the blender. Grind if needed. Add the liquid from the chickpeas.
  • Taste and adjust the seasoning (I like to add more lemon juice).
  • Serve, drizzled with the olive oil and sprinkled with some cumin, paprika, and parsley.
