Mediterranean Dinosaur Salad

Ingredients
2 Cups chopped kale
¼ Cup cherry tomatoes, halved
4 Kalamata olives, pitted, halve, or any olives
¼ Cup artichoke hearts (canned in water)
¼ Cup cooked chickpeas
⅛ Cup red onion, diced
1 tbsp balsamic vinegar
Salt and black pepper to taste
Directions
- Before making the salad, mix and squeeze the kale with your hands for a few minutes. This will help make the kale more tender.
- Combine the kale, tomatoes, olives, artichoke hearts, chickpeas, and onion in a mixing bowl.
- Toss with the balsamic vinegar and salt and pepper to taste.
- Serve with crusty bread.
