Mixed beans , kale and vegetables Soup

minutesThis is a very healthy soup because of the multitude of calcium and vitamin A in the kale. The beans also are a great source of protein!
Ingredients
1 cup mixed beans (soak for 5 to 6 hours)
1 cup kale – very finely chopped
1 medium onion – finely chopped
3 large tomato – finely chopped or 14 oz can
2 large carrots – chopped
1 red bell pepper – chopped
2 tsp garlic – in a paste
2 tsp Italian herbs
2 tbsp fresh basil
2 tbs olive oil
Salt to taste
Black pepper to taste
Directions
- Add beans to a big pot or pressure cooker with 3 cups of water, or more as required.
- Add kale, salt, Italian herbs, and black pepper. Close the lid for about 20 minutes or if you’re using a cooker, until you hear 2-3 whistles, and keep at medium heat. Continuously stir.
- Take a fry pan, and add oil and onions. Stir at slow heat for 2 minutes. Add tomato, carrots, bell pepper and garlic and stir for 1 minute.
- Now, add the vegetables to the beans and mix. Keep again on the stove for about 10 to 14 minutes or longer if needed. If you see the soup is not thick, add 2 tsp cornstarch.
- Ready to eat with garlic bread or as you like!!
Notes
- Add any beans as you like, and any vegetables.
