Moonglet (Vegetarian Lentil Omelette)

minutesNowadays More and more people are moving to plant-based diets. A vegetarian or vegan eating pattern is one way to eat heart healthy. Eating vegetarian food can help decrease LDL (“bad”) cholesterol levels and blood pressure.
Ouelette is one of the most popular breakfast choices. I tried making a plant-based omelets from soaked and ground Moong dal mixed with vegetables. It is high in protein content and tasted pretty good. It can be served with chutney and optionally with toast.
Ingredients
I cup yellow moong dal (Lentil) . Soak for 3-4 hours, grind and let it rest for 1 hour.
1 small onion – finely chopped
½ cup cabbage – finely chopped
½ cup green bell pepper (or any color) – finely chopped
2 green chilies (or to taste) – finely chopped
1 tbsp cilantro – finely chopped
2 tsp salt or to taste
½ tsp hing
2 tsp red chili powder (or to taste)
1 tsp turmeric powder
1 tsp baking soda + ½ tsp citric acid (or 1 packet of Eno)
Oil for cooking
Chutney – for serving
Directions
- Add all vegetables to moong dal mix
- Now add all spices and stir to mix vegetables and spices
- Add water, if required, to make the batter consistency like pancake batter
- Stir with a whisk to make it fluffy and keep aside for 2 minutes.
- Put the fry pan on the stove (medium heat), add spread oil and wait until the pan is hot.
- Meanwhile, add citric acid and soda (or eno) in the batter, and lightly stir with whisk again. Batter will rise.
- Spread the batter on the pan, wait for about 3 minutes or till it is golden brown.
- Flip it, apply oil, and let it cook on the other side till golden brown.
- Ready to Serve. Serve with chutney and toast (Optional)
- Note: Add Citric acid and soda just before you cook Moonglet.
