Pumpkin Curry (Kaddu Ke Sabji)

minutesIt is very tasty curry and healthy also, normally make this with poori.
Ingredients
2 pounds fresh pumpkin – cut in small pieces
2-3 pieces (about ¼ cup) fresh green mango (if you don’t find fresh, frozen works too, and if you don’t find that either, use 1 tsp amchoor powder)
2 green chillies – finely chopped
1 tbs oil
1 tsp fenugreek seeds (methi dana) or mustard seeds
½ tsp hing
1 tsp red chilly powder or to taste
2 tsp coriander powder
1 tsp turmeric powder
Salt to taste
1 tsp sugar
½ tsp garam masala
1 tsp fresh coriander leaves
Directions
- Start medium heat. Put the oil in the pan. When the oil starts smoking, add the fenugreek seeds and hing.
- Mix and then add the pumpkin, fresh mango, and green chilly. Stir, then add salt, red chilly powder, turmeric powder, and coriander powder. Mix and add ½ cup water. Close the lid for about 5 minutes, but stir every once in a while. When the curry is tender, add sugar, garam masala and amchoor powder (if you didn’t use mangoes).
- Turn off the gas and cover the lid for about 2 minutes.
- For garnish, use coriander leaves.
- Ready!! Enjoy with roti, paratha or poori.
