Pumpkin Curry (Kaddu Ke Sabji)

It is very tasty curry and healthy also, normally make this with poori.

Ingredients

  • 2 pounds fresh pumpkin – cut in small pieces

  • 2-3 pieces (about ¼ cup) fresh green mango (if you don’t find fresh, frozen works too, and if you don’t find that either, use 1 tsp amchoor powder)

  • 2 green chillies – finely chopped

  • 1 tbs oil

  • 1 tsp fenugreek seeds (methi dana) or mustard seeds

  • ½ tsp hing

  • 1 tsp red chilly powder or to taste

  • 2 tsp coriander powder

  • 1 tsp turmeric powder

  • Salt to taste

  • 1 tsp sugar

  • ½ tsp garam masala

  • 1 tsp fresh coriander leaves

Directions

  • Start medium heat. Put the oil in the pan. When the oil starts smoking, add the fenugreek seeds and hing.
  • Mix and then add the pumpkin, fresh mango, and green chilly. Stir, then add salt, red chilly powder, turmeric powder, and coriander powder. Mix and add ½ cup water. Close the lid for about 5 minutes, but stir every once in a while. When the curry is tender, add sugar, garam masala and amchoor powder (if you didn’t use mangoes).
  • Turn off the gas and cover the lid for about 2 minutes.
  • For garnish, use coriander leaves.
  • Ready!! Enjoy with roti, paratha or poori.
