Rava Dosa (Savoury Semolina Crepe)

minutesRava dosa is a thin, crispy and delicious dosa that can be instantly prepared. It is made with commonly available pantry ingredients like sooji, maida and rice flour and served with sambar and coconut chutney. Rava dosas are a staple in South Indian restaurants and tiffin centers.
When pouring, you need to make sure that tawa is very hot and also need to pour the mix in a very thin layer. Reduce the heat to low/ medium after pouring.
Ingredients
½ cup sooji (semolina)
2 tbsp cup maida (all purpose flour)
1/2 cup rice flour
2tbsp dhai
water 2/1/2 cup
1 medium size onion – finely chopped
1 medium size bell bell pepper – finely chopped
2 green chilies -finely chopped (or to taste)
2 tbsp cilantro -finely chopped
2 tsp cumin seeds
1 tsp red chilli powder
2 tsp kali mirch powder (black powder)
Directions
- Take a bowl and add sooji, all purpose flour and rice flour. Mix.
- Add salt, pepper, cumin seeds and red chili powder. Mix and add 2/1/2 cups of water.
- Stir well and keep aside for about 20 minutes.
- Add onion, green bell pepper, cilantro and green chili, Mix all vegetable in to the better.
- Put on a tawa or a fry pan on high heat.
- When the tawa/ fry pan is very hot, spread the oil on the tawa/ fry pan.
- Take the mixture bowl, stir very well and check for buttermilk like consistency. Add more water, if needed.
- Pour the mix in a thin layer on the tawa/ fry pan using a small bowl or big serving size spoon. Start pouring from the edges and move to the center. You will see holes all over. Reduce the heat to low/ medium.
- Apply additional oil on top. Toast from both sides till golden brown.
- Stir the mix again and check the consistency for the next dosa and increase the heat again.
- Serve with chutney and sambar.
- Serve hot
