Bhapa Doi, or sometimes called Mishti Doi, is a very elegant and tasty Bengali dessert. Made with 2 main ingredients, curd and condensed milk with cardamom and saffron (or other ingredients) used for flavor. It is one of the healthier and easy to make desserts with limited sugar and no oil or butter. Steaming the mixture gives it a very unique texture and taste. You can serve it warm or chilled though I prefer to eat it chilled.
Now you can have a dessert without feeling guilty-conscious.

Moong Daal Kachori With Aloo And Chole Curry
Moong dal kachori is a very tasty and filling snack, very popular in North India. It is very delicious served as standalone but yum factor will increase when served with aloo sabji and choley along with chutney. Main ingredients are whole wheat flour and moong dal.
It is a bit of work to prepare but you will forget all the work when you enjoy the taste.
Paneer Afghani Tikka (Spicy Grilled Indian Cottage Cheese)
Paneer Tikka is a North Indian appetizer where chunks of paneer are marinated in yogurt and spices and then grilled in tandoor (Clay oven). This recipe is for Afghan Paneer Tikka and is from the kitchen of mughals, known for their culinary skills. Instead of a clay oven, I grilled paneer/ vegetables in a pan. Alternatively, an electric/ gas oven can be used.
Use fresh paneer and serve it hot with green chutney and lemon.
Potato Pinwheel Bites (Bite Size Samosa Alternate)
Samosas are a popular Indian snack. Sometimes we crave eating homemade samosa but do not feel like putting in all the effort to make it. Potato pinwheel bite is an alternative that tastes like samosas and fairly easy to make at home with little preparation.
Diabetic Friendly Vegan Breakfast Patties
Food trend, nowaday, is trending towards healthy vegan food with less carbohydrates, especially with diabetes and blood sugar prevalence at an all time high level. I tried to make vegan patties with lots of vegetables and used a small quantity of chickpea flour (contains lots of proteins) as a binder. It is very simple to make, tastes delicious and also can be stored for a couple of days in a fridge. The recipe below details the vegetables that I used but the recipe can use any vegetable that you like.
Enjoy this as breakfast or snack and require little effort.
