Vegetable Focaccia Bread

We eat bread all the time, but usually buy from the store. But making homemade bread is really worth it – try it out! Feel free to add more vegetables to this delicious bread. 

Ingredients

  • 4 cups all purpose flour

  • 1 can (or fresh) tomatoes (12 oz)

  • 1 tbsp fresh or dry basil

  • 1 tbsp Italian herbs

  • 1 cup olives – cut into small pieces

  • 1 cup jalapeno

  • 1 large red onion- cut into slices

  • Optional- fresh basil for topping

  • Salt and pepper to taste

  • 5 tbsp olive oil

  • 1 packet dry yeast

  • 1 tbsp sugar

Directions

  • First, take ¼ cup warm water and add yeast, then mix. Let sit for about 5 minutes or until bubbly.
  • Meanwhile, in a blender mix tomatoes, basil, Italian herbs, salt, and pepper to taste.
  • Take a big wide bowl and add flour, the tomato mixture, and the yeast mixture. Mix everything for 2-3 minutes with olive oil and use a light hand or a dough maker.
  • Add oil on the surface of the dough.
  • Keep in a container, cover with a wet towel and keep in a warm place for about 2 hours or until the dough doubles, then press the dough so the air comes out.
  • Then cover and let the dough rise for about another hour.
  • Split the dough in half with a knife.
  • Take a tray and spread oil on it and spread a piece of dough in the tray.
  • Now take another tray and do the same.
  • Then spread oil and vegetables on the dough.
  • Cover the tray and let the dough rise for about ½ -1 hours.
  • Meanwhile, preheat the oven to 400F
  • Now, put the tray in the oven for about 15 to 20 minutes or as you like.
  • Let cool for about 10 to 15 minutes.
  • Cut and serve at room temperature with salad and soup.
  • Enjoy!
