Ingredients
1 cup chana dal or yellow split peas
¾ cup water or as need
1 tbsp vegetable oil
1/2 tsp black mustard seed
1 onion – finely sliced
2 garlic cloves – finely minced
1 tsp ginger – grated
1 fresh red chilli – finely chopped
10 oz fresh or frozen spinach – chopped
1 tsp chilli powder or to taste
1 tsp coriander powder
1 tsp garam masala
Salt to taste
1 lemon juice
Directions
- Wash the chana dal or split peas. Put into a bowl and fill with plenty of water, and let soak for 30 minutes.
- Drain the dal. Take a large pan with water and salt, and put it on the stove. When the water is boiling, add the dal. Let simmer for about 20 to 30 minutes or until the dal is soft.
- Meanwhile, take a pan with oil and put the gas. When the oil is ready, add mustard seeds. Wait for 2 minutes, or until they begin to crackle.
- Add the onion, ginger, and chilli and fry for 5 to 6 minutes, until softened but not coloured.
- Add the spinach and cook for 10 minutes or until the spinach is dry and the liquid has evaporated. Stir in the remaining spices and add salt, then cook for 2-3 minutes.
- Drain the dal and add to the spinach mix. Cook for about 5 minutes.
- Ready! Serve immediately.
