Spicy Thai- Peanut Ramen Noodles/ Soup (Vegan) is very easy to make and is delicious in taste with. coconut water, vegetable broth, crispy tofu and mushrooms. Kids and adults both will like this recipe

Ingredients

  • 12 ounces ramen noodles – see the direation on the package and boil the remen and keep aside.

  • 2 tsp olive oil

  • 2 -3 garlic cloves – minced

  • 1tbsp grated fresh ginger

  • 1 tsp green curry paste or to taste

  • 4 cups vegetable broth

  • 1 can (~12oz) of coconut milk

  • ½ cup peanut butter

  • 2 tbsp soy sauce

  • 2 tbsp agave syrup or honey

  • Juice of 2 limes

  • Toppings (Optional):

  • 2 tbsp oil

  • 8 oz mushrooms – sliced

  • 6 – 8 oz tofu – sliced and baked

  • 2 tsp sesame seeds (black or white)

  • 2-3 Thai chilies (to taste)

  • Cilantro

  • Peanuts, chopped

  • Add any other vegetables for topping as per taste

Directions

  • Sauce
  • Put on a large pot on slow – medium heat, add olive oil with garlic and ginger.
  • Stir for about 2 minutes. If needed, reduce heat.
  • Add green curry paste, stir and wait for another minute.
  • Then add 3 cups vegetable broth and coconut milk, mix and simmer the heat.
  • Take a bowl, add peanut butter with 1 cup vegetable broth, whisk the mixture and add liquid into the pot. Stir for about 2 minutes.
  • Add soy sauce, lime juice and agave.  Stir the mixture.
  • Simmer on low for 5 to 10 minutes. Stir intermittently.
  • Taste and adjust spices as per taste at this stage.
  • Noodles
  • cook the ramen noodles as per directions on the package
  • Set aside.
  • Topping
  • Take a small wok/ frying pan and oil (1-2 tbsp) and heat on medium high flame
  • Add Tofu and heat on all sides till golden brown (2-3 minutes)
  • Remove Tofu and set aside
  • Add mushrooms and other vegetables and roast on medium high these are soft from outside (Add salt and pepper as desired)
  • Serving
  • Take medium size bowl, add noodles
  • Add Sauce on top of noodles
  • Add Tofu, mushroom and other vegetables
  • Garnish with sesame seeds, peanuts, cilantro and Thai chilies.
  • Serve piping hot!
