Guava (Amrood) Ice Cream

Guava is a popular summer fruit and is cultivated in many tropical and subtropical regions. This unique flavor kulfi recipe uses fresh guavas. To enhance flavor, I added a bit of rock salt and red chili flakes (May sound weird but makes something unique). You can eat it during fasting time also by skipping corn starch.

Ingredients

  • 1 cup whole milk

  • 200 ml fresh whipping cream

  • ⅓ cup milk powder

  • ⅓ cup sugar

  • ⅓ cup condensed milk

  • 1 tbsp cornstarch

  • 4 small guavas (2 medium guavas) – ripe. Cut, remove seeds and purée

  • ½ tsp black salt – optional

  • ½ tsp red chili powder – optional

  • ½ cup finely chopped guava – optional

Directions

  • Add milk in the pan and bring to boil on medium heat.
  • Add cornstarch to I tbsp milk and dissolve it so that there are no lumps
  • Add cornstarch mix to boiling milk and keep stirring the milk (About 1 minute)
  • Add sugar and mix until dissolved.
  • Whip the whipping cream for about a minute and add to boiling milk and keep stirring
  • Add condensed milk, milk powder and guava purée and keep stirring till you get a consistent mix.
  • Add ¼ tsp red chili flakes, ¼ tsp salt and ¼ cup chopped guava (optional).
  • Mix and pour in an airtight container.
  • Freeze for about 7 to 8 hours.
  • Garnish with salt,red chili flakes and remaining chopped guava pieces (Optional).
  • Enjoy!
