Besan Burfi (chickpea flour)

minutesThis sweet dish is very popular in festivals and pujas. I put a variation on the burfi by adding flour, but you’ll love it! It’s easy to make and tastes delicious.
Ingredients
1 ½ cups besan chickpea flour
1 ½ cups all purpose flour
1 cup ghee or butter – requried
1 cups sugar or taste
1/2 cups milk
1 cup water
2 tbsp almond
few threads saffron
2 tsp cardamom powder
Directions
- First, strain the besan and all purpose flour mix. Then, take a heavy pan and put it on the gas on medium heat. Add ghee. When the ghee is melted, add the flour and stir continuously so that it doesn’t stick. Keep stirring for about 20 minutes until golden brown. Then, put the mix on a plate and let cool for about 4 to 5 minutes.
- Take another pan and add water and sugar. Start at medium heat and stir. Now, add milk and keep stirring. When the sugar syrup is thick, and you see threads if you pick it up, turn off the gas and cool the syrup.
- Add the flour mix to the syrup and mix gently. Make sure not to make lumps in the flour. Take a greased tray and pour the flour on the tray. Garnish with cardamom and almond. Let set for about 15 to 20 minutes and cut in pieces (look at the picture for ideas). Let sit for 2 to 3 hours.
