Ingredients
4 oz vegetable shortening or butter
8 oz all purpose flour
1/3 cup sugar
4 tbsp cashew – soaked for 1 hour
1 egg
2 tbsp cherry
Directions
- Preheat oven to 450 F
- Mix the sugar and butter for 10 to 12 seconds. Filter the flour and using a strainer.
Take the egg and add only the yolk to the sugar. Keep the white part, we’ll use it later.
Mix. Next, add the flour to the sugar mixture and mix for 2 minutes with a whisk (don’t use an electric mixer as it will damage the dough).
Using this dough, make small biscuits in any shape. Put a cherry and cashews (or peanuts) in the center.
Be sure to press them in a little so they don’t come out. Dip the cookie in the egg white. Bake for 12 minutes or until golden brown. - Ready! Serve with tea or coffee.
