Cheese – Stuffed Pears

minutesThese pears with their delicious cream topping make a great side dish when served with a salad!
Ingredients
¼ cup ricotta cheese
¼ cup dolcelatte (gorgonzola dolce) cheese or blue cheese
1 tbsp honey
½ celery rip, finely sliced
8 green olives, pitted and roughly chopped
4 dates pitted and cut into thin strips
pinch of paprika
4 ripe pears
½ cup apple juice
for garnish, walnuts, pecans, and/or rosemary
Directions
- Preheat the oven to 400F
- Place the ricotta cheese in a bowl and crumble in the dolcelatte. Add the rest of the ingredients except for the pears and apple juice and mix well.
- Halve the pears lengthwise and use a melon baller to remove the cores.
- Place in an ovenproof dish and divide the cheese mixture equally among them.
- Pour the apple juice carefully into the dish, cover with foil, and bake for 20 minutes, or until the pears are tender.
- Remove the foil and place the dish under a hot broiler for about 3 minutes.
- Garnish with rosemary and nuts.
- Serve immediately with fresh salad and enjoy!
