These pears with their delicious cream topping make a great side dish when served with a salad!

Ingredients

  • ¼ cup ricotta cheese

  • ¼ cup dolcelatte (gorgonzola dolce) cheese or blue cheese

  • 1 tbsp honey

  • ½ celery rip, finely sliced

  • 8 green olives, pitted and roughly chopped

  • 4 dates pitted and cut into thin strips

  • pinch of paprika

  • 4 ripe pears

  • ½ cup apple juice

  • for garnish, walnuts, pecans, and/or rosemary

Directions

  • Preheat the oven to 400F
  • Place the ricotta cheese in a bowl and crumble in the dolcelatte. Add the rest of the ingredients except for the pears and apple juice and mix well.
  • Halve the pears lengthwise and use a melon baller to remove the cores.
  • Place in an ovenproof dish and divide the cheese mixture equally among them.
  • Pour the apple juice carefully into the dish, cover with foil, and bake for 20 minutes, or until the pears are tender.
  • Remove the foil and place the dish under a hot broiler for about 3 minutes.
  • Garnish with rosemary and nuts.
  • Serve immediately with fresh salad and enjoy!
