Cranberry Apple Slump

minutesApple and cranberry complement each other and makes a wonderful sweet dish. In this cobbler like dessert, they are baked with biscuit topping and the juice from the fruit bubble up and are absorbed by the topping to give it a delightful flavor. Can be served hot or cold and liked by all age groups.
Ingredients
4 cups granny smith or other green apples – cut into slices
2 cups cranberries – fresh or frozen
1 cup sugar
Biscuit topping
1-1/2 cups all purpose flour
2 tsp baking powder
½ tsp salt
½ cup butter @ room temperature
½ cup milk
Orange zest (Grated) from 1 orange
Directions
- Preheat the oven to 350 f
- In a large bowl, mix sugar with apple slices and cranberries.
- Spread this fruit mix evenly over the bottom of a large ovenproof pan.
- Cook on medium heat uncovered, until the juices are bubbling (about 10 minutes).
- Meanwhile to make topping: mix flour, baking powder, orange zest and salt into a bowl.
- Add butter and blend this into the four mixture using a pastry blender..
- Gradually add milk, and keep mixing until the flour is mixed. Do not overmix.
- Drop the flour mix onto fruit by using a overflowing tablespoon
- Alternately you can also roll the dough, make cut biscuits and put it on top of fruit mix.
- Place it in heated oven and bake until the biscuits are golden and the fruit is bubbling, for about 35 minutes.
- Serve immediately, or let cool on a wire rack and serve at room temperature.
