Sponge Dhokla

Try this mouth watering and delicious recipe. This will make Dhoklas very spongy and similar to what you get in a restaurant. Your friends and your family will be amazed at your culinary skills.

Ingredients

  • 1-1/2 cups Besan (200 gm)

  • 2 tsp salt

  • 8 tsp powdered sugar

  • 1 tsp ginger paste (or finely grated ginger)

  • 2 or 3 green chillies (Adjust as per taste) cut into small pieces

  • 1 tsp citric acid

  • 1/3 tsp hing

  • 1 tsp turmeric powder

  • 1 tsp baking soda

  • Water to make batter

  • 2 tbsp oil

  • Few curry patta (leaves)

  • Coriander leaves for garnishing

  • Seasoning

  • 2 tsp Mustard seeds

  • ⅓ tsp Hing

  • Green Chillies as per taste (5 -10)

  • 1 tsp Salt (or to taste)

  • 1 tbsp Sugar

  • 1/2 tsp Citric Acid (or lemon juice)

  • 1 tsp Degi Mirch

Directions

  • Take a big wide bowl and add 1 cup water, hing, ginger paste, green chilli (cut), citric acid, salt, turmeric powder and sugar. Stir till all ingredients are mixed.
  • Add besan, then stir and make a paste, make sure there are no lumps.
  • Add oil and additional water and keep mixing in one direction till you get consistency like tomato ketchup. Keep mixing for about 5 minutes.
  • Keep aside for about half an hour.
  • Add baking soda and mix it till soda is mixed uniformly. Solution will become fluffy now.
  • Take a dhokla maker, add water and put on the high heat.
  • Coat dhokla maker tray with oil and pour batter.
  • Steam for about 30 minutes. Check in by dipping knife, if it does not stick on knife,  it is ready.
  • Take it out of steam and let it cool.
  • Put dhoklas in a tray and cut into pieces of desired size.
  • Seasoning
  • Take a fry pan and add oil, add mustard seed when when oil is heated. Wait until mustard seeds crackle.
  • Add curry patta,degi mirch, salt, hing, and green chillies.
  • Add about 2 cups of  water, sugar and citric acid (Or lemon) and wait till it boils.
  • Pour it on top of Dhoklas and leave for about ½ an  hour. if possible keep on fridge.
  • Garnish with coriander leaves.
  • Enjoy! With any chutney.
