Creamy Mango Brûlée

hoursSummer is a great time for mango recipes! I am using simple ingredients and an easy process here to make mango creamy brulee.
Ingredients
2 ripe mangoes
1 cup mascarpone cheese
¾ cup yogurt – remove the water
1 tsp ground ginger
1 lime – grated and juiced
2 tbsp soft light sugar
8 tbsp raw brown sugar
Directions
- First, take 4 small oven-safe bowls.
- Peel and cut the mangoes into small pieces and distribute equal amounts in the bowls.
- Then, beat the mascarpone cheese with the yogurt and fold in the ginger.
- Now, add the lime rinds, juice, and soft light sugar and mix.
- Divide the mixture among the bowls and level off the tops. Chill for about 2 hours.
- Sprinkle 2 tbsp of raw brown sugar over the top of each dish.
- Cover the cream mixture and put in the oven and broil for 2-3 minutes, or until the sugar is melted and looks brown.
- Let cool, then chill until needed.
- Enjoy!
Notes
- If you don’t have an oven, put in the microwave for 40s-1 minute then use a lighter for the last step sugar melting.
- If you don’t have mascarpone cheese, mix 8 oz cream cheese, 2 tbsp unsalted butter, and ⅓ cup light whipping cream for the equivalent of a cup of mascarpone. Mix for about 2 minutes.
