Creamy mango brûlée

Summer is a great time for mango recipes! I am using simple ingredients and an easy process here to make mango creamy brulee.

Ingredients

  • 2 ripe mangoes

  • 1 cup mascarpone cheese

  • ¾ cup yogurt – remove the water

  • 1 tsp ground ginger

  • 1 lime – grated and juiced

  • 2 tbsp soft light sugar

  • 8 tbsp raw brown sugar

Directions

  • First, take 4 small oven-safe bowls.
  • Peel and cut the mangoes into small pieces and distribute equal amounts in the bowls.
  • Then, beat the mascarpone cheese with the yogurt and fold in the ginger.
  • Now, add the lime rinds, juice, and soft light sugar and mix.
  • Divide the mixture among the bowls and level off the tops. Chill for about 2 hours.
  • Sprinkle 2 tbsp of raw brown sugar over the top of each dish.
  • Cover the cream mixture and put in the oven and broil for 2-3 minutes, or until the sugar is melted and looks brown.
  • Let cool, then chill until needed.
  • Enjoy!

Notes

  • If you don’t have an oven, put in the microwave for 40s-1 minute then use a lighter for the last step sugar melting.
  •  If you don’t have mascarpone cheese, mix 8 oz cream cheese, 2 tbsp unsalted butter, and ⅓ cup light whipping cream for the equivalent of a cup of mascarpone. Mix for about 2 minutes.
