Quinoa salad

minutesThis salad is a very healthy and colorful, also tasty and refreshing! It’s perfect for summer!
Ingredients
1 Cup quinoa
1 large tomato – cut in small pieces
½ Cup English cucumber – cut in small pieces
½ Cup onion – finely cut
½ Cup romaine (or any other kind) salad
½ Cup corn
1 Tbsp each of fresh mint,
1 bunch parsley and – finely chopped
2 Tbsp olive oil or grape-seed oil
Salt and pepper to taste
1 lemon juice or more
Directions
- First, cook the quinoa, and keep in the refrigerator for at least an hour.
- Take a big wide bowl and add quinoa, tomatoes, cucumber, onion, corn and green leaf salad.
- For the dressing, mix oil, salt, and pepper. Lastly, add mint and parsley.
- Add the dressing to the quinoa salad. and lemon juice .
- Garnish with lemon and keep in the refrigerator for at least 2 hours, then serve!
- Note: Add any other vegetables that you’d like when adding the tomatoes and cucumbers.
