Sweet Rice

minutesWe always make something sweet for pujas and end up eating far too much sugar. Here’s a sweet dish to try out on festive days with only minimal sugar!
Ingredients
2 cups basmati rice
½ cups sugar or jaggery (or to taste)
2 tsp fennel seeds
1 tsp cardamom powder
2 tbsp cashew nut
2 tbsp raisins
⅓ cup ghee
⅓ tsp cinnamon powder
Few threads saffron
Few drops of yellow food color
Directions
- Wash the rice and cook until almost ready (you will cook it more later).
- Start on medium heat and add ghee to a fry pan then wait until the ghee is hot.
- Take 2 tbsp milk and add saffron, then keep aside.
- Add cashews and fry for a minute then set on paper towels. Repeat with raisins.
- Now add fennel seeds to the frypan and wait 30 seconds, then add the rice and sugar/ jaggery.
- Add the saffron mixture and stir.
- Add the yellow food coloring and mix. Keep at medium heat for about 2 to 3 minutes.
- Garnish with dry fruits and close the lid for about 2 to 3 minutes.
- Enjoy hot or at room temperature
Notes
- If in a hurry, follow these steps:
- Take a frypan or pressure cooker and add ghee, then fennel seeds.
- Add rice with water.
- Add sugar and the other ingredients and wait for 1 whistle from the pressure cooker, then close the gas and keep the lid closed until the steam is gone.
