Paneer Afghani Tikka (Spicy Grilled Indian Cottage Cheese)

Paneer Tikka is a North Indian appetizer where chunks of paneer are marinated in yogurt and spices and then grilled in tandoor (Clay oven). This recipe is for Afghan Paneer Tikka and is from the kitchen of mughals, known for their culinary skills. Instead of a clay oven, I grilled paneer/ vegetables in a pan. Alternatively, an electric/ gas oven can be used.

Use fresh paneer and serve it hot with green chutney and lemon.

Side, Snacks

Potato Pinwheel Bites (Bite Size Samosa Alternate)

Samosas are a popular Indian snack. Sometimes we crave eating homemade samosa but do not feel like putting in all the effort to make it. Potato pinwheel bite is an alternative that tastes like samosas and fairly easy to make at home with little preparation.

Curry, Side, vegan

Guar Beans (Cluster Beans) Curry

Guar (Cluster) beans have low carb and high fiber content and are extremely good for weight reduction and for diabetic patients. It also contains protein and calcium. This curry is not only healthy, but also very simple and easy to make.

If the beans are not tender, it may take a little bit of work to remove the thread from both sides but the effort is worth the end result.

Serve with dal (lentil) curry and chapati.

Breads, indian bread

Cabbage (Patta Gobhi) Paratha with Onion

These stuffed cabbage parathas are very easy to make and healthy as well since they are packed with vegetables. They are super yummy, and ideal to take to work/school for lunch since they are just as delicious without a curry. Moreover, they’re great to sneak in vegetables for the kids since you don’t notice the cabbage.

Side, Snacks

Jodhpuri Mirchi Pakora (indian snack)

Jodhpuri Mirchi Pakoras also known as Rajasthani Mirchi Vadas is prepared with less spicy green peppers stuffed with spicy/ tangy potato stuffing, dipped in a thick layer of gram flour batter and then deep fried until crispy. It is a great evening snack especially on a rainy day and is served with tea and zingy coriander chutney or ketchup.

Aligarh ki Khasta Poori with Aloo Sabji

Pooris are very popular deep fried flat breads in India. These are made in different styles. One style that is very popular and is very tasty comes from the North Indian town of Aligarh called ‘Aligarh ki Khasta Poori’ or ‘ Aligarh ki Khasta Kachori’. These go well with a spicy potato curry and a yogurt preparation called ‘Raita’ to reduce the heat. Here is my recipe for this delicious dish
