Vegan Poke Bowl

minutesThis bowl is so easy to make, and it’s also great for meal prepping! It’s a perfect lunch with protein, fats, and carbs.
Ingredients
½ cup cooked quinoa
1 small avocado
½ cup edamame
½ cup tofu
⅓ cup cucumber – chopped
2 tbsp cilantro – finely chopped
Greens (I used spring mix)
Lemon juice
Salt to taste
Pepper to taste
2 tsp sriracha or to taste
Soy sauce to taste
Chopped cilantro and lemon for garnish
Oil for frying
Directions
- Cut the tofu into cubes. Start a fry pan on medium heat.
- Add 2 tbsp oil, then add the tofu. Fry until golden brown (or cook for 15-20 minutes at 400F in the airfryer).
- Take a plate and add tofu, edamame, cucumbers, quinoa and sliced avocado.
- Lastly, spread sriracha and soy sauce and any other sauces you’d like.
- Garnish with cilantro, lemon, and salt and pepper as your taste. ½ cup cooked quinoa
