This bowl is so easy to make, and it’s also great for meal prepping! It’s a perfect lunch with protein, fats, and carbs.

Ingredients

  • ½ cup cooked quinoa

  • 1 small avocado

  • ½ cup edamame

  • ½ cup tofu

  • ⅓ cup cucumber – chopped

  • 2 tbsp cilantro – finely chopped

  • Greens (I used spring mix)

  • Lemon juice

  • Salt to taste

  • Pepper to taste

  • 2 tsp sriracha or to taste

  • Soy sauce to taste

  • Chopped cilantro and lemon for garnish

  • Oil for frying

Directions

  • Cut the tofu into cubes. Start a fry pan on medium heat.
  • Add 2 tbsp oil, then add the tofu. Fry until golden brown (or cook for 15-20 minutes at 400F in the airfryer).
  • Take a plate and add tofu, edamame, cucumbers, quinoa and sliced avocado.
  • Lastly, spread sriracha and soy sauce and any other sauces you’d like.
  • Garnish with cilantro, lemon, and salt and pepper as your taste. ½ cup cooked quinoa
