Vegetable Wrap

minutesThis wrap is a very healthy and tasty, and it is super yummy recipe.
Ingredients
1 tbsp olive oil
3 Cups cups cubed eggplant (½ – inch cubes)
Salt and pepper to taste
3 tsp fresh lemon juice
2 tsp balsamic vinegar
1 cup chopped spinach leaves
½ cup chopped tomato
1 cup hummus
4 , 10 or 11 – inch tomato or spinach flavored tortillas
Directions
- First, take a wide pan and add the eggplant. Sprinkle some salt on and leave it for about a minute on the paper towel, then wash the eggplants.
- Heat the olive oil in a large pan at high heat until it smokes.
- Mix the eggplant with the salt and pepper in the pan, stirring frequently.
- Cook until the eggplant is tender (about 5 minutes) and all sides are brown.
- Remove from the heat and toss with 1 tsp lemon juice and vinegar.
- Mix the spinach with the tomatoes in a large bowl.
- Add salt and pepper and the remaining lemon juice.
- Add the eggplant, and toss.
- Spread the hummus evenly on the tortillas, leaving at least a 1 – inch border around the edge. Divide the eggplant mixture amongst the tortillas.
- Ready !
