Ingredients
1 Cup chickpea or kabuli chana – canned or cooked, or tofu – cut into cubes
1 Cup kale – finely chopped
1 Cup quinoa – cooked
1 Cup spinach – finely chopped
1 Medium size sweet potato – cut into cubes
1 Cup green beans – cut into halves
1 Medium size onion – cut into slices
1 Avocado – cut into slices
2 tbsp hummus
Olive oil for seasoning
Salt and pepper to taste
Onion powder, garlic powder to taste
1 tsp red chilli powder
1 Lemon
2 tbsp coriander leaves
Directions
- Take a fry pan and oil and set at medium heat.
- Add chickpeas, onion salt, garlic powder, onion powder, and red chilly powder.
- Mix everything for about 1 minute, then close to the lid and keep aside.
- If using tofu, add to oil at high heat. Stir and add seasoning as you like.
- Take another fry pan and add oil with onions. Mix at high heat for about 1 minute. Add salt and pepper to taste, then remove the onions.
- If needed, add more oil, then add green beans. Mix, wait for about 1 minute, then mix again.
- Add sweet potatoes, mix, and add salt and pepper to taste. Cover for about 2 minutes or until tender.
- Remove the veggies.
- Add kale, mix, and add salt and pepper to taste. Stir for 1 minute then remove.
- Add spinach, mix, with salt and pepper to taste. Stir for 1 minute, then close the lid for about 1 minute.
- Take a wide plate then make a circle on the plate with separate sections of tofu or chickpeas, quinoa, hummus, spinach, kale, sweet potato, green beans, and onions.
- Garnish with lemon juice and coriander leaves.
