Sooji Badam Barfi / Halwa

minutesFestive time in winters is a good time to enjoy sweet dishes. Nuts like badam (almonds) provide necessary proteins and calories to body. This can be prepared in halwa format (enjoy hot) or barfi format (enjoy at room temperature)
Ingredients
3/4 cup sooji
2 cup coarsely crushed badam (almonds)
6 oz ghee or unsalted butter
2-1/2 cup whole milk
1 cup sugar (Adjust to taste)
Chandi vark (Edible silver leaf, optional)
Few threads of saffron
2 tsp cardamom powder
Directions
- Take a heavy pan and put on low medium heat.
- Add ghee and add sooji after butter melts; Roast for about 10 minutes till sooji is baked and brown in color.
- Meanwhile take milk, add saffron and keep aside.
- Add badam and stir with sooji for about 4 minutes.
- Add saffron milk, sugar and cardamom powder
- Keep stirring till milk evaporates and you get desired consistency (More dry for Barfi)
- For Barfi, pour mixture into a ghee coated tray and flatten the mixture.
- Apply Chandi Vark after cooling and cut into desired size
- For Halwa, garnish with nuts
- Enjoy!
