Young tender spinach leaves are delicious served with avocado, cherry tomato and radishes in a tofu sauce.

Ingredients

  • 1 large avocado

  • 1 lime juice

  • 8 ounces fresh baby spinach leaves

  • 4 ounce cherry tomatoes

  • 4 scallions, sliced

  • ½ cucumber or to taste

  • 2 ounce radishes,sliced

  • radish roses and herb sprigs, to garnish

  • dressing
  • 4 ounce soft, silken tofu

  • 3 tbsp milk

  • 2 tsp prepared mustard

  • ½ tsp white wine vinegar

  • pinch of cayenne, plus extra to serve

  • salt and black pepper

Directions

  • Cut the avocado in half, remove the pit, and strip off the skin. Cut the avocado into slices. Remove to a plate, drizzle with the lime juice and set aside. Wash and dry the spinach leaves. Put them in a mixing bowl.
  • Cut the cherry tomatoes in half and put all the tomatoes in the mixing bowl with the scallions. Cut the cucumber, and put it into the mixing bowl with the radishes.
  • Dressing
  • Put the tofu, milk, mustard, wine vinegar and cayenne in a food processor for 30 seconds, until smooth. Scrape the dressing into a bowl and add some extra cayenne then garnish with radish and herb sprigs.
