Lauki ka Raita is so good and incredibly easy to make; it takes less than 5 minutes! As the weather is getting warmer, this is a great way to cool down!

Ingredients

  • 1 cup lauki (squash) – grated or finely chopped

  • 1 cup plain yogurt

  • 1 tsp black pepper

  • 1 tsp cumin seed – roasted and crushed

  • Salt to taste

  • Mint and coriander leaves

Directions

  • First, add lauki to a pressure cooker with about ⅓ cup water and wait until you hear one whistle. Turn it off, and when the lauki is cool, squeeze and remove the excess water. Add yogurt, salt, cumin seed, and coriander leaves.
  • Ready to serve! Serve with roti, paratha or when fasting.
