Palak paneer is a very rich and mouthwatering curry. It is very easy to make. Recently, I was at Jungle Jim’s, and a lady in the India aisle asked me how palak paneer was made, and I was inspired to write this. Palak Paneer is a very common Indian dish.

Ingredients

  • 2 or 3 mustard leaves – finely chopped and wash

  • 2-pound spinach – cut and wash

  • 14 oz Paneer – cut into small pieces

  • 1 medium size onion – grated

  • 3 medium sized tomatoes

  • 2 green chilly – chopped finely

  • 1 teaspoon ginger paste

  • 1 teaspoon red  chilly powder

  • 1 teaspoon coriander powder

  • Salt to taste

  • 1/2 teaspoon cumin seed

  • 1 teaspoon Garam masala

  • 1 tablespoon oil / ghee or more as you like

  • 1/2 cup fresh cream (if you would like a creamier texture)

Directions

  • Start the heat and take a large pan and add about 3 cups of water. and put the heat for until water is boiled close the heat and add the spinach and mustard in the pot and let it sit in the water for about 3 to 5 minutes. Remove the spinach, mustard from the warm water and put it in 3 cups of cold (ice cold) water. This helps preserve the green color.
  • After two minutes, take the spinach and mustard and grind it in a food processor. It is important to use a food processor because the leaves should not be puréed – it should only be in smaller pieces. If you don’t have a food processor, use a blender.
  • Take a frypan and pour the oil in. Warm the oil is warm, add the cumin seed. When the cumin seed starts crackling, add the onion and mix. Keep the gas on low for about 2 minutes.
  • Add the tomato, green chilly, ginger and garlic. Again, mix everything about 2 minutes on low. Add the paneer and mix. Pour in about 1/2 cup of water and cover the lid for about 20 to 25 minutes still on low gas. keep stir.
    Add the Garam masala and mix.  Lastly, if you like cream, mix it in now.
  • And you’re done! Eat your palak paneer with naan or rice. Enjoy this delicious curry
